I like to have a healthy treat with my afternoon coffee. No oil, no refined sugar, just oats, vegetables and a pinch of salt – you know, “good for me” food, so I don’t feel guilty while having a sweet and satisfying snack.
I found a healthy Zucchini muffin recipe with olive oil. I’m altering it to shed some calories, using apple sauce instead of the oil and carrots instead of the zucchini.
I hope my Husband loves it. We will see…..
If these Healthy Carrot Muffins taste yummy, I’ll try them again with pumpkin, beets, bananas or apples.

I will also give them the “freezer test” to see how they taste two weeks later. That way I can bake a whole batch, freeze most of it and take one out ever morning for a fresh tasing treat during the day.
Always having a healthy snack in the freezer keeps me from eating “junk” I should not eat….. you know what I mean…

You will need the following ingredients:
2 cups of rolled Oats
8 pitted Madjool dates
1/2 cup apple sauce
1/4 cup real maple syrup
3 cups grated carrots
1 Tsp. Baking soda
Chocolate chips (optional)
Preheat the oven to 350 degrees.
Grate carrots and keep one cup aside
Mix all ingredients in a blender (except the1 cup of shredded carrots)
Pour into a bowl then mix in the cup of carrots
Pour into the silicone tray
Bake for 40-45 min
